PREPARATION:
Preheat oven to 400°. Line broiler pan with
aluminum foil. Wash and debone fish. Cut into serving size pieces. Place
in pan, skin down. Top with salt and lime zest.
Seed banana peppers and cut into strips. Set
aside.
Place sherry, oil, rosemary, garlic and lime juice in blender. Blend
until garlic is well distributed in liquids. Pour over fish.
Add freshly ground pepper (or Lawry's Seasoned Pepper) and a little cayenne
pepper. Add banana pepper strips beside fish.
Bake for 13 minutes, then broil for two minutes.
